For Young Ones, It’s Fairy Taste

image“I wanted something unique to show my friends”, my little girl said. She actually wanted to be the star at school by showing off to her friends her mommy’s culinary expertise and for that she needed proof. Now I was anxious as to what to cook to keep up my little one’s prestige. I kept thinking what she meant by unique; couldn’t let her down too. It suddenly struck me that just like any other kid her age she loved the fairy tale princesses, Barbie, the witches on the broomsticks, the charming savior prince and a thousand other make-believe characters from the enchanted magical world. I remember seeing her on a broomstick fooling around only to get admonished. So I thought of gifting her something distinct in its appearance and something linked to her fancy land which she would be thrilled seeing. I was certain that this small and cute treasure she will not only love to munch on but also to show off. Maybe she could make it her princess’s carry bag!

For the base:
Flour – 1 cups
Wheat flour – 1 cup
Red chili powder – 1 ½ tsp.
Turmeric powder – ½ tsp.

Shredded coriander leaves – a handful
Salt – as required
1) Combine all the above ingredients into a soft dough using water.
2) Make small balls and keep them aside

For the stuffing:

Onion – 1 cup

Green chilies – 2 nos.

Ginger-garlic paste – 1 tsp.

Coriander leaves – handful

Cottage cheese – chopped and sautéed in oil – ¾ cup

Beans – 1/4 cup

Grated carrot – 1/ 4 cup

Salt to taste

Yoghurt– 1 ½ tbsp.

Turmeric powder – ½ tsp.

Garam masala – ½ tsp. (It is a blend of ground spices used extensively in Indian cuisine.)

Powdered pepper – 1 tsp.

1) Sauté the onion till done and add the green chilies, ginger-garlic paste and coriander leaves.
2) Add the beans and carrot and mix well followed by the spices, i.e., turmeric, garam masala, pepper and salt.
3) Finally add the cheese and yoghurt. Mix well and switch off the flame.
4) Allow the mixture to cool down.

Method:
1) Roll out the balls and flatten each of them into a round.
2) Place a small portion of the stuffing onto this base and cover it  by pulling the dough from all sides and closing it on top and twisting a bit so as to look like a treasure bag.
3) Steam each of them till it’s cooked.
